This is a series of posts that give you a better idea of who I am. I found the idea from Living off Love and Coffee's blog post but instead of 30 days, I'm only committing to 20. I Googled to see if there were another origins for this idea and found many '30 days of me' posts but this one I liked the most so here we go!

Day 14 - A recipe

I found this recipe when I was looking for things to make with bacon. I didn't create it, please see the original post by Dinner with Julie. Bacon jam is amazing and should be in everyones refrigerator. We spread it on bread or crackers, top burgers or through it into a sauce for an extra kick. You could also heat it up and pour over some ice cream!

When I made this I pulsed half the recipe in the food processor and left half chunky for a really great texture.

Bacon Jam

Ingredients

  • 1 lb good-quality bacon
  • 1 small onion, chopped
  • 4-5 garlic cloves, chopped
  • 1/2 cup packed brown sugar
  • 1/2 cup brewed coffee (hot or cold)
  • 1/4 cup maple syrup
  • 1 Tbsp. balsamic vinegar (optional)
  • 1 Tbsp. grainy mustard (optional)

Directions

Roughly chop the bacon and cook it in a heavy pot; transfer to a bowl using a slotted spoon, draining off most of the drippings. Saute the onion and garlic cloves in the rest for 5 minutes, until soft and starting to turn golden. Return the bacon to the pan, add the brown sugar, coffee, maple syrup, vinegar and mustard and cook over medium heat for half an hour, or until deep golden and thickened to the consistency of jam. If you like, cool and pulse in the food processor for a finer texture. Serve warm or cold.
